Working for my uncle

I have been working in my uncles pizza place for a few weeks now, and in all honesty it is nothing like I had expected. That’s not to say that it has been a bad experience or anything like that, but it has just been different. If you were to ever meet my uncle, you would quickly find out that he is old school. The same style is brought to his pizza shop ever since he opened its doors nearly 40 years ago. There is no air conditioning installed in the restaurant whatsoever, and my uncles reasoning for this is because the air conditioning can disrupt the rising process of the pizza dough. I don’t know if this is something that could be backed up with facts, all I know is that it is extremely hot and sweaty in the kitchen during my shifts. There was even one time not too long ago when I thought I would be slick by bringing my mini portable air conditioning unit in during my morning shift and use it while I was chopping vegetables and preparing other toppings. Normally nobody else is in the place during that time and my uncle would have no knowledge of my a/c unit. To my astonishment however, later in the day my uncle called me into his office. Apparently just from the look and texture of the dough he could tell that the air had been far cooler than normal, and he was able to get me to confess to bring in my a/c unit quickly. I will never make that same mistake again after seeing how angry he was with me, and I cannot believe that he was able to figure out that I did so in the first place!
